Ingredients:
- 300g brussel sprouts, peeled, halved. 150
- 300g sweet potato, peeled, chunked. 261
- 2x salmon fillets. 516
- 1 tbsp veg oil. 124
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper
Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster, toss sprouts and potatoes in oil, garlic powder, cumin, salt and pepper.
- Roast for 45 mins, stirring halfway.
- Meanwhile; On small tray; In bottom oven, roast salmon in foil pouch for 25 mins.
- Skin salmon. Serve.
