Roasted Sprouts and Sweet Potato with Salmon

Ingredients:

  • 300g brussel sprouts, peeled, halved.  150
  • 300g sweet potato, peeled, chunked.  261
  • 2x salmon fillets.  516
  • 1 tbsp veg oil.  124
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster, toss sprouts and potatoes in oil, garlic powder, cumin, salt and pepper.
  3. Roast for 45 mins, stirring halfway.
  4. Meanwhile; On small tray; In bottom oven, roast salmon in foil pouch for 25 mins.
  5. Skin salmon. Serve.

Tip: Swap salmon for trout or tuna.
