Ingredients:
- 300g brussel sprouts, peeled, halved. 150
- 300g carrots, peeled, chunked. 123
- 2x chicken breasts, goujons. 500
- 1 tbsp veg oil. 124
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- Salt and pepper
Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster, toss carrots in oil, salt and pepper.
- Roast for 30 mins.
- Add sprouts, stir, roast for 22 mins.
- Remove from oven, nestle oiled chicken breasts in with veg.
- Roast for 22 mins more.
- Plate up chicken.
- Chop sprouts in half.
- Drizzle veg with honey and balsamic. Mix.
- Serve.
