Roasted Honey Balsamic Sprouts and Carrots with Chicken

Ingredients:

  • 300g brussel sprouts, peeled, halved.  150
  • 300g carrots, peeled, chunked.  123
  • 2x chicken breasts, goujons.  500
  • 1 tbsp veg oil.  124
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster, toss carrots in oil, salt and pepper.
  3. Roast for 30 mins.
  4. Add sprouts, stir, roast for 22 mins.
  5. Remove from oven, nestle oiled chicken breasts in with veg.
  6. Roast for 22 mins more.
  7. Plate up chicken.
  8. Chop sprouts in half.
  9. Drizzle veg with honey and balsamic. Mix.
  10. Serve.
