Ratatouille with Sausages

Ingredients:

  • 500g potatoes, chunked.  405
  • 2 onions, roughly chopped.  150
  • 3 peppers, roughly chopped.  150
  • 2 courgettes, roughly chopped.  80
  • 300g mushrooms, roughly chopped.  24
  • 2 cans chopped tomatoes.  200
  • 500g Vittoria tomatoes, halved.  160
  • 2 tbsp veg oil.  248
  • 12 BGTY sausages or vegetarian sausages.  900
  • 1 tsp rosemary
  • 1 tsp thyme
  • 2 tsp garlic purée.  34

Method:

  1. In large saucepan; Parboil new potatoes for 10 mins. All other potatoes, omit this step.
  2. Preheat oven to 180°C Fan/Gas Mark 6.
  3. In 14x10" Pyrex roaster (& 7" yellow Pyrex dish) or (use x2 11x8" Pyrex dishes); Toss onions, peppers and potatoes in oil, herbs and garlic. Season.
  4. Bake for 25 mins.
  5. Stir in courgettes and mushrooms.
  6. Bake for 25 mins. Stir.
  7. Add all tomatoes. Place sausages on top.
  8. Bake for 40 mins, turning halfway.
