Ingredients:
- 500g potatoes, chunked. 405

- 2 courgettes, roughly chopped. 80

- 2 cans chopped tomatoes. 200
- 500g Vittoria tomatoes, halved. 160

- 12 BGTY sausages or vegetarian sausages. 900

- 1 tsp thyme

Method:
- In large saucepan; Parboil new potatoes for 10 mins. All other potatoes, omit this step.
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster (& 7" yellow Pyrex dish) or (use x2 11x8" Pyrex dishes); Toss onions, peppers and potatoes in oil, herbs and garlic. Season.
- Bake for 25 mins.
- Stir in courgettes and mushrooms.
- Bake for 25 mins. Stir.
- Add all tomatoes. Place sausages on top.
- Bake for 40 mins, turning halfway.
