Ingredients:
- 3-4 sweet potatoes (700g total), peeled, 1.½" cubes. 497

- 3 tsp garlic purée. 51
- 2 tbsp (90g) harissa. 203

- 225g light halloumi, 1cm cubes. 623
Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster; Toss everything except halloumi, in garlic and harissa.
- Roast for 45 mins.
- Stir. Scatter halloumi on top of veg.
- Roast for 25 mins until halloumi browns.
- Serve.
