Halloumi and Harissa Double Potato Bake

Ingredients:

  • 3-4 sweet potatoes (700g total), peeled, 1.½" cubes.  497
  • 600g baby potatoes, chopped.  396
  • 2 carrots (200g each), slices.  156
  • 1 onion, roughly chopped.  75
  • 3 peppers, roughly chopped.  150
  • 3 tsp garlic purée.  51
  • 2 tbsp (90g) harissa.  203
  • ⅛ tsp pepper
  • 225g light halloumi, 1cm cubes.  623

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster; Toss everything except halloumi, in garlic and harissa.
  3. Roast for 45 mins.
  4. Stir. Scatter halloumi on top of veg.
  5. Roast for 25 mins until halloumi browns.
  6. Serve.

Note: Cut sweet potatoes bigger than baking potatoes as they cook quicker.
