Cod with Tomatoes, Olives and Capers

Serves: 2, Time: 1 hr

Ingredients:

  • 250g Cod (cut into large pieces - stack if thin)
  • 500g Vittoria tomatoes
  • ½ tin of chopped tomatoes
  • 1 tbsp (30g) capers
  • 20 black Kalamata olives, halved
  • 1 tbsp veg oil
  • 1 medium onion, chopped
  • 1 tsp garlic purée
  • salt, pepper
  • ¼ tsp oregano
  • ¼ tsp thyme

Method:

  1. In sauté pan; Soften onions and garlic in oil. 5 mins.
  2. Add tomatoes, olives, capers, herbs, salt, pepper. Steam, covered, for 10 mins. Stir gently.
  3. Stack cod on top of sauce. Steam, covered, for 15 mins.
  4. Serve with boiled potatoes and wilted spinach or kale.

Tip: Add broccoli at same time as fish to absorb flavours.

Tip: Other veg can be added at same time as fish to steam together.
