Cajun Beef Fajita Wraps

Ingredients:

  • 2 frying steaks (90g each), sliced.   336
  • 1 small onion, sliced.   50
  • 1 red pepper, sliced.   40
  • 1 medium courgette, sliced.   40
  • ½ tbsp veg oil.   62
  • 4 tsp Philadelphia Light.   68
  • 4 Old El Paso tortillas, wholemeal.   468
  • 2 tsp Cajun spice

Method:

  1. In sauté pan; Fry veg in oil (peppers for a few mins longer) over medium heat, until softened. Stir frequently.
  2. Turn veg onto plate and flash-fry beef in remaining oil/juices. 1 min at most.
  3. Sprinkle beef liberally with Cajun spices and toss well before turning onto plate.
  4. Warm tortillas in microwave for 20 secs.
  5. Put a few strips of veg/beef down centre of tortillas and spread on a tsp of Philly.
  6. Wrap tightly and enjoy!
