Ingredients:

Bangers:

  • 1 tbsp veg oil.  124
  • 10 Butchers Choice Pork Sausages.  1220
  • 2 large onions, diced.  150
  • 4 tsp garlic purée.  34
  • 400g carrots, sliced.  164
  • 2 celery sticks, sliced.  10
  • 3 tsp sage
  • 1 tsp smoked paprika
  • 500ml dry cider (Westons vintage).  280
  • 400ml ham stock (1 Knorr stock cube).  60
  • 50g plain flour (slurry).  171
  • 2 Braeburns, peeled, cored, diced.  86
  • Salt and pepper to taste

Mash:

  • 1.25kg potatoes, peeled, chunked.  1013
  • 50g butter.  375
  • 100ml milk.  50
  • Salt and pepper to taste

Method:

  1. In sauté pan; Fry sausages in ½ tbsp oil until golden, 10 mins. Slice. Set aside.
  2. Soften onions, garlic, carrots and celery in ½ tbsp oil. 7 mins.
  3. Add sage, paprika, cider and stock.
  4. Return sausages to pan. Simmer. Covered. 45 mins. Stir occasionally.
  5. Meanwhile, in largest saucepan; Cover potatoes with boiled water. Simmer for 20 mins until tender, drain. Mash with butter, milk, salt and pepper.
  6. Add apples to sauté pan. Simmer. 5 minutes. Season to taste.
  7. Mix in flour slurry to sauté pan. Stir well. Simmer. 3 mins.
  8. Serve stew with mashed potatoes on the side, or compile like cottage pies in individual dishes. (Bake at 180°C Fan for additional 30 mins until gravy bubbles, or 40 mins from chilled).
